BRAZIL CERRADO is grown on beautiful rolling hills in the region of Chapada de Minas. This is a really special natural process coffee. The natural process gives it a softer acidity and a somewhat fruity taste. This coffee is extremely popular with espresso aficionados and is widely used as a base in espresso blends. It is delicious and not bitter or strong by itself and most any other coffee origin that is added to make a blend really seems to shine when used with this wonderful natural process Brazilian bean. GRADE is 17/18 screen. PLANT ALTITUDE is an average of 2,400 feet above sea level. PLANT VARIETAL is 70% Catuai Vermelho and 30% Mundo Novo. CUPPING NOTES starts with nutty undertones and finishes with full bodied sweetness. ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly. As heat is applied the beans will change in color from green to yellow, to ever darkening shades of brown, once the roast level desired is achieved beans are cooled quickly.
