Einka, commonly known as Einkorn, is rich in fiber, protein, phosphorus, vitamin B6, potassium...the list goes on! It is considered a type of farro (an Italian term for ancient hulled wheat). Its simple gluten structure has appeal for those suffering from gluten sensitivities. Our Einka berries are a nutritional powerhouse that offer wonderful possibilities for pilafs, soups, salads, and more. Cooking Directions: Add 1 cup Bluebird Einka Farro and a pinch of salt to 2 cups water or stock. Bring to a boil, reduce heat and simmer covered for 20-30 minutes. Turn off heat and let stand 5 minutes. Drain excess liquid. Serve hot or cold. 1 cup makes 3-4 servings.
