- The olives are “FRESH” not pasteurized; packed in modified atmosphere bags to inhibit fermentation and oxidation. (about 95% of all competitors’ are pasteurized).

- Our olives are picked when ripe. Olives are a fruit. Most olives on the market are lye-cured. Byzantine olives are naturally cured, using methods that are centuries old, in sea salt, herbs and spices.
