It is composed of straccia (‘little shreds’) of stretched curd mixed with cream. The result is a soft textured cheese with a smooth and creamy taste.
The origins of this cheese are in the Italian region of Puglia. Stracciatella needs to be consumed promptly, while it is still soft and fresh.
