The Savannah Fine Cutlery Orion 8-inch Chef's knife is a one piece blade with full tang of high carbon stainless steel (5CR15MoV). The steel is heat treated to a 54 - 55 HRC (Rockwell measurement) for long edge life and easy maintenance in honing and sharpening. Also the high CR (chromium) content makes the steel quite stain resistant. Please hand wash to maintain the beauty of the knife. The knife has good weight - excellent for cutting and chopping. The 18 degree blade edge is taper ground to a thicker back to the bolster and through the handle for long life and durability. The Pakkawood handle is created using intense heat and pressure to fuse multiple layers of resin infused hardwood into a beautiful, durable and moisture resistant composite and is as easy to care for as plastic. The impregnated color carries through the entire thickness of the material while the resin provides a built in finish. The combination of a polished stainless steel blade and a comfortable Pakkawood handle make this the workhorse in your kitchen and looks elegant as well.
