So we set out to make apple cinnamon bread. We used lots of apples, our best cinnamon, and a sweet apple flavor for the dough. The result was very good but we wanted something more. Maybe a little orange zest. So we added just a touch of natural orange. If you make this bread in your bread machine, water temperature is critical. Please use a thermometer to measure water at exactly 80 degrees. A ten degree difference in water temperature can double the growth rate of the yeast.
