This Lebkuchen comes from a bakery in a small town in, Germany, where it has been made for over 600 years. Historically, monks began adding a flavorful dough to the wafers being made for mass, and over time, more ingredients and spices were added to make the product that you're enjoying today. The recipe is a well-kept secret, and is made using a blend of nuts and spices. The newest version is more moist, and contains even more nuts than before - the minimum standard in Germany for these cookies is 12.5% nuts. Trader Joe's previous offerings contained 20% nuts. The new Lebkuchen at Trader Joe's contains 25% nuts, including almonds, hazelnuts, and walnuts. You'll also recognize orange and spice flavors in the biscuits, which are baked on top of very thin wafer cookies - the hallmark of Lebkuchen.
