TANZANIA AA - Harvest period for these coffees is June-August. The Mbya region consists of roughly 400,000 smallholder farmers that own, on average 500 trees each. Many practice subsistence farming methods and all their coffee is handpicked. Tweega coffee comes from the washing stations in the Southern Highlands from the cooperative Tembo Coffee Company. Processing method is wet-processing, sundried, coffee is graded and sorted at Tembo's facility in Mbya. Coffee is grown at high altitudes of 1,400-2,000 meters in fertile volcanic soil that is lightly acidic, rich in nitrogen, potassium, and magnesium. Plant varietals are Bourbon & Typica. Cupping Notes are silky with notes of burgundy, pear, and tangerine. Very refreshing acidity and juicy body. Light fruity finish. ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly. As heat is applied the beans will change in color from green to yellow, to ever darkening shades of brown, once the roast level desired is achieved beans are cooled quickly.
